Enchilada Casserole

Ingredients

  • 1 lb. ground beef
  • 1 can enchilada sauce
  • 1 C. salsa
  • 6 flour tortillas
  • 2 C. whole corn
  • 4 C. shredded cheddar cheese

Preparation

Step 1

Preheat the oven to 350 degrees. Cook the beef in a skillet over medium until it is no longer pink. Drain and stir in the enchilada sauce and salsa. Put two tortillas in the bottom of a large casserole dish. Cover with 1/3 of the meat mixture and top with 1 cup corn. Sprinkle on 1 1/3 cups cheese. Repeat the layers once and top with the rest of the tortillas, meat, and cheese. Bake 30 minutes until bubbling.
