Mandarin Chicken Salad

Ingredients

  • Dressing:
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 cup red wine vinegar
  • 6 Tbsp corn oil
  • 1/4 cup sugar
  • Salad:
  • 4 or 5 mandarins, peeled and separated
  • 4 skinless, boneless chicken breasts, cooked and chopped up
  • 1 cup petite frozen peas
  • 1 head iceberg lettuce, cored and chopped
  • 1/2 cup chopped cilantro
  • 1/2 cup toasted slivered almonds
  • 1/4 cup toasted sesame seeds
  • 2 cups maifun rice noodles, cooked per package instructions

Preparation

Step 1

Dressing:

In a small bowl, whisk together all ingredients.
Refrigerate until ready for use.
Whisk again before use

Salad:

In a large bowl, toss together all ingredients except noodles.
Pour dressing over salad to taste.
Toss well
Stir noodles in
Serve immediately
