Ingredients
- Dressing:
- 2 tsp salt
- 1 tsp pepper
- 1/2 cup red wine vinegar
- 6 Tbsp corn oil
- 1/4 cup sugar
- Salad:
- 4 or 5 mandarins, peeled and separated
- 4 skinless, boneless chicken breasts, cooked and chopped up
- 1 cup petite frozen peas
- 1 head iceberg lettuce, cored and chopped
- 1/2 cup chopped cilantro
- 1/2 cup toasted slivered almonds
- 1/4 cup toasted sesame seeds
- 2 cups maifun rice noodles, cooked per package instructions
Preparation
Step 1
Dressing:
In a small bowl, whisk together all ingredients.
Refrigerate until ready for use.
Whisk again before use
Salad:
In a large bowl, toss together all ingredients except noodles.
Pour dressing over salad to taste.
Toss well
Stir noodles in
Serve immediately
