Poor Mans Paella

This is a very simple spin on a Paella type recipe. Actually, calling it Paella is a bit of a stretch, but the texture is there with a milder flavor. Like most of my recipes, the kids love it.

Ingredients
- For a more authentic Paella, add:
- 1 Family size box of ZATARAIN'S® Yellow Rice
- 2 12 oz Beef or Turkey Sausages (sliced into 1/4 in thick slices)
- 1 Small Onion chopped
- 3 Cloves Garlic minced
- 2 Tablespoons Butter
- Green Onion sliced thin
- Red/Yellow Pepper
- 2 Teaspoons Oregano
- 1/2 bunch chopped Parsley
- 1 Tablespoon Paprika
- 1 Teaspoon crushed red pepper flakes
- lemon zest
Preparation
Step 1
In a large sauce pan, start cooking the Rice per the boxed instructions. Usually takes about 25-30 minutes.
When there is about 10-15 minutes left on the rice, put the onion, butter (and pepper if you want) into a really large skillet. It must be big enough to hold the rice too. Cook over Med/High heat. When the onions are translucent (5-7 minutes) add the garlic and cook another 2 - 4 minutes; Don't burn the garlic. Now add the sausage slices and lower the head to Med. Stir this once in a while to ensure both sides of the sausage slices get cooked/browned. Continue cooking until the Rice is done.
When the rice is done (and not too wet), simply dump it into the skillet with the Onions and Sausage. Turn the heat to high mix it all together. If you're doing a more authentic paella add the Oregano, Parsley, Paprika, Red Pepper Flakes and Lemon Zest at this time. Let the mixture sit for a couple of minutes... Once it starts to stick to the pan, stir it. Repeat this until enough of the rice has a nice 'crust' to it. Usually around 10-15 minutes.
Top with the Green Onions and serve.
