Chewy Oatmeal Raisin Granola Bars

Ingredients

  • 1/4 cup butter or coconut oil
  • 1/4 cup brown rice syrup
  • 1/4 cup honey or brown sugar
  • 2 cups quick oats
  • 1 cup crispy rice cereal
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 2-3 heaping Tablespoons California Raisins

Preparation

Step 1

In a small pot, melt butter, brown rice syrup, honey or brown sugar. When it starts to boil, reduce heat and cook for 4 minutes on medium-low heat but make sure the mixture continues to minimally bubble. Stir often.

In a large bowl, mix oats, rice cereal, salt and raisins. Set aside.

After 4 minutes, turn off heat and add vanilla. Stir to combine.

Pour liquid mixture into dry bowl. Mix well to combine all ingredients.

Dump evenly coated mixture into lined baking dish. Cover with parchment paper and press down with your hands until cereal mix is well packed. Just when you think you've pressed down enough, press again.

Allow the pan to cool at room temperature for at least 2 hours.

Lift parchment paper out onto a cutting board and slice into 12 bars.

After cutting bars, store in an airtight container or zip bags for up to 1 week.
