Ingredients

  • Salad Dressing:
  • 1/2 cup roughly chopped Cilantro
  • 1/2 cup Olive Oil
  • 3 tablespoons lime juice
  • 2 Garlic Cloves, minced
  • 1 teaspoon Honey
  • 1 teaspoon Chipotle Powder
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • For the Salad:
  • 2 cups Lettuce
  • 2 cups cooked Quinoa
  • 1 cup Black Beans, drained
  • 3/4 cup Corn, drained
  • 1 cup Cherry Tomatoes, cut in half

Preparation

Step 1


Blend all the ingredients for the dressing in a blender for a minute till smooth.

Transfer all the ingredients for the salad in a bowl and toss with the dressing. If serving later, pour the dressing just before serving to avoid the salad from getting soggy.
