Spicy Beef & Rice
This is one of those "clean out the cupboard" recipes. Look around and see what you have on hand to toss into dish. Great for days when you don't have time to cook!
- 1 lb. ground beef
- 1 onion, chopped
- 2 bell peppers, thinly sliced
- 1 or 2 cans diced tomatoes w/green chilies
- 1 can tomato sauce
- 1 can black beans
- (whole kernel corn would be good too)
- Salt and pepper to taste
- Cooked rice
Preparation time 15mins
Cooking time 30mins
Brown ground beef and onions; drain.
Add remaining ingredients except the rice.
Simmer till heated thoroughly and bell peppers are softened but still have some crunch.
Serve over rice.
