Crispy Cheddar Chicken Tenders

A version of baked chicken strips with some cheese thrown in and a nice sauce.

Ingredients
- 1 lb Chicken Tenders (or 2 breasts cut into strips or about 6 tenders)
- 1 Sleeve Ritz crackers
- 1/4 cup Mayo
- 1 cup grated cheese (cheddar or Mexican blend)
- Salt and Pepper
- Parsley
- 1 10oz can cream of chicken soup
- 2 Tb sour cream
- 2 tb butter
- NOTE: The sauce is enough for a double batch of tenders
Preparation
Step 1
Chicken
Crush crackers and put into a bowl. Put the cheese into another, and finally the mayo into a third. Salt and pepper the cracker crumbs to taste. more pepper than salt)
Spread mayo on the chicken then roll in the cheese. Press the cheese into the chicken with your fingers. Do not use too much cheese or else the coating will melt off. Finally, coat the cheesy chicken with the cracker crumbs and press it in.
Spray a 9×13-inch pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400°F for 25 minutes. Remove the tin foil, bake for an additional 10 minutes, or until the edges of the chicken are golden brown and crispy.
Sauce
In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter. Stir it over medium high heat until the sauce is nice and hot.
