  • 2 T. Kosher Salt
  • 1 1/2 T. dark brown sugar
  • 1 T. paprika
  • 1 t. dry mustard powder
  • 1 t. onion powder
  • 1 t. garlic powder
  • 3/4 t. dried basil
  • 1/2 t. dried thyme
  • 1/2 t. ground savory
  • 1/2 t.ground coriander
  • 1/2 t. ground black pepper
  • 1/2 t. ground white pepper
  • 1/4 t. ground cumin
  • 1 rack beef spare ribs (about 3 lbs)

Preparation

Step 1

1. Mix salt, sugar, mustard, paprika, onion, garlic, basil, thyme, savory, coriander, peppers, and cumin in a bowl. Rub the ribs all over with the spice mixture. Let sit at room temperature for 1 hour or chill overnight.

2. Prepare smoker: Smoke ribs at 225-250 degrees, 3-4 hours until knife slips easily in and out of the meat.
