  • 1/2

    t. ground savory

  • 1/2

    t.ground coriander

  • 1/2

    t. ground black pepper

    t. ground white pepper

    t. ground cumin

  • 1

    rack beef spare ribs (about 3 lbs)

Directions

1. Mix salt, sugar, mustard, paprika, onion, garlic, basil, thyme, savory, coriander, peppers, and cumin in a bowl. Rub the ribs all over with the spice mixture. Let sit at room temperature for 1 hour or chill overnight. 2. Prepare smoker: Smoke ribs at 225-250 degrees, 3-4 hours until knife slips easily in and out of the meat.
