MOM'S PERKINS COOKIES
- 3 cups oatmeal
- 2 cups flour ( I use whole wheat)
- 1/2 cup white sugar
- 1 cup shortening
- 1 tsp. ginger
- 1 tsp. cinnamon
- 2 eggs
- 3/4 cup molasses
- 2 tsp. soda in a little hot water
Combine oatmeal, flour, sugar, shortening, ginger, and cinnamon in a mixing bowl and rub together like making pie crust. Add the eggs, molasses, and soda dissolved in water.
Drop by small spoonsful onto cookie sheet and flatten with a fork. Leave plenty of space between because they spread out a lot.
Bake at 350F for about 20 minutes, depending on your oven.
