  • 1 cup water
  • 1/2 cup dry quinoa
  • STIR IN:
  • 2 Tbsp. slivered almonds, toasted
  • 2 Tbsp. each chopped fresh cilantro and scallions
  • 1 Tbsp. fresh lemon juice
  • 1/4 tsp. each kosher salt and black pepper

Preparation

Step 1

Combine water and quinoa in a saucepan; prepare according to package directions. Fluff quinoa with a fork.

Stir in almonds, cilantro, scallions, lemon juice, salt, and pepper.
