Ingredients
- 1/4 cup dry breadcrumbs
- 1/4 cup grated fresh Parmesan cheese
- 1/4 tsp seasoned salt
- 1/4 tsp garlic powder
- 1/8 tsp freshly ground black pepper
- 2 tbsp skim milk
- 2 1/2 cups zucchini slices, 1/4" thick
- cooking spray
Preparation
Step 1
1. Preheat oven to 425 degrees
2. Combine first 5 ingredients in a medium bowl, stirring with a whisk. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture. Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet.
3. Bake at 425 degrees for 30 minutes or until browned and crisp.
couldn't be made ahead. They'd lose all their crispiness
My notes: Excellent! Used Old Bay in place of the seasoned salt - would do again.
