Ingredients
- 1 1/2 pounds peeled, cubed sweet potatoes
- 1/4 cup tahini
- 1 tablespoon honey
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground ginger (optional)
Preparation
Step 1
1. Place peeled, cubed sweet potatoes in a large saucepan; cover with water. Bring to a boil; reduce heat and simmer until very tender, about 15 minutes. Drain.
2. Place potatoes, tahini, honey, kosher salt, and, if desired, ground ginger in a food processor; process until smooth.
Makes 4 servings.
