Mile High Strawberry Pie (Susan Brown)

Ingredients

  • TOPPING:
  • 1/2 cup butter, melted
  • 1/4 cup brown sugar
  • 1 cup flour
  • 1 cup pecans, chopped
  • FILLING:
  • 2 10oz boxes of frozen strawberries, thawed slightly
  • 2 egg whites
  • 3/4 cup sugar
  • 1 Tbsp lemon juice
  • pinch of salt
  • 2 cups whipped topping OR 1 cup whipping cream, whipped
  • 1 tsp vanilla

Preparation

Step 1

Mix all topping ingredients together, and bake on cookie sheet for 20 minutes at 350. Set aside to cool while you make filing. Using an electric mixer on high, beat the strawberries, egg whites, sugar, lemon juice and salt for 15 minutes. Whisk vanilla into whipped topping or whipped cream, then fold into strawberry mixture. Spread into pie plate. Sprinkle on the topping and place in freezer until ready to serve.
