Ingredients
- 2 large, ripe peaches
- 1/2 TBLSP. lemon juice
- 1 1/2 TBLSP.balsamic vinegar
- 6 TBLSP. olive oil
- 1/3 c. chopped fresh chives
- 12 c. mixed baby greens
- salt and pepper
Preparation
Step 1
Wash and peel peaches. Cut in half; remove pits. Thinly slice peaches. Place slices in large bowl.
Add lemon juice; toss. Whisk balsamic vinegar and olive oil in small bowl. Whisk in chives. Season with salt and pepper.
Add baby greens to bowl with peaches. Add dressing and toss. Season with more salt and pepper, if desired, and serve.
