Ingredients
- 1 lb Italian sausage
- 1/2 cup minced onion
- 1 cup frozen peas
- 1 cup chopped carrots
- 1 cup cubed potatoes
- 1 can (15oz) stewed tomatoes with basil, oregano and garlic
- (you can also use a can of diced or chopped tomatoes)
- 32 ounces beef broth
Preparation
Step 1
Turn the instant pot on sautee and add the sausage and onions with the lid open. Cook until sausage is brown and onions are transparent.
Add peas, carrots, potatoes and tomatoes to the pot. Pour in broth. Stir to mix well.
Turn the instant pot on the soup function for 15 minutes and close the pressure switch. Once the cooking cycle is complete, quick release the pressure.
Remove the lid and serve the stew.
Notes
I also like to add kale to this recipe from time to time, it gives it a little different flavor and adds some nice nutrients.
