Cheese Pennies

Ingredients

  • 1/2 cup softened butter
  • 2 cups grated sharp cheddar cheese
  • 2 all-purpose flour
  • 1/4 tsp. salt
  • 1/2 tsp. cayenne pepper
  • 1/2 cup very finely chopped pecans
  • Paprika

Preparation

Step 1

Cream butter and cheese together, using an electric mixer. Sift in flour, salt, and cayenne, and then add cheese-butter mixture and the pecans.
Roll into 1-inch-diamete logs. Wrap in wax paper, refrigerate until firm.
Slice crosswise in to "pennies".

Bake on ungreased cookie sheet at 350F. degrees or 10-15 minutes, keeping close watch so they don't burn.

Dust with paprika before cooling
