Ingredients
- 1 sm eggplant
- 1 zucchini
- 1 red pepper
- 4 portobellos
- goat cheese
- pinch of salt, pepper and nutmeg
- 3 eggs
- 1 cup cream
- pie crust
Preparation
Step 1
Cut veggies to even sizes and toss with olive oil, salt and pepper and roast at 400 until slightly tender. In bowl whisk eggs, spices and cream. Arrange veggies in pie crust and pour egg mixture over until 3/4 full. Dot with goat cheese and push down a little. Bake for 45+? minutes until egg mixture is set. Let rest 5 minutes before serving.
