Broccoli-Cheese Soup

  • 4 cups broccoli, florets
  • 2 1/2 cups vegetable broth
  • 1/4 cup fat-free skim milk
  • 1/2 tsp table salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded fat free cheddar cheese (sharp

Preparation

Step 1

Combine the broccoli and broth in large saucepan; bring to a boil. Reduce heat and simmer until broccoli tender (10 min)

Transfer broccoli and about 1/2 cup cooking liquid to a blender. Puree until very smooth, scraping the sides of the blender every 30 seconds. Slowly add remaining liquid through blender cover opening. P
