*You can use the "secret ingredient" in scratch pancakes or pancake mix.*

My husband was a member of Kiwanis and every year they had a pancake breakfast fund raiser. He was responsible for making the pancakes so one year he decided to add a little "zip" to his recipe and added some 7-up instead of buttermilk. The pancakes turned out to be extra fluffy and light...they were a big hit.

Ingredients

  • 2 cups of all purpose flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 Tablespoon of sugar
  • 1 teaspoon of vanilla
  • 2 large eggs
  • 1/2 cup of buttermilk
  • 1 cup of ginger ale
  • 3 Tablespoons of melted butter
  • optional ingredients: blueberries, nuts, chocolate chips or bacon crumbles

Step 1

*If you don't want to bother with making these pancakes from scratch, use buttermilk pancake mix and substitute the liquid requirement with any carbonated beverage such as sprite, 7-up or ginger ale. Follow the package directions.

Mix wet ingredients and add to dry ingredients. Blend just until mixed.

Pour on the griddle. If you would like to add an optional ingredient you should drop them onto the batter at this point.

When batter begins to bubble toward the center of the pancake, use a large spatula and flip.
