Ingredients
- 1 1/2 cup flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1 cup finely shredded unpeeled zucchini (do not squeeze or dry shredded zucchini)
- 1/4 cup Oil
- 1 egg
- 2 tablespoons lemon juice
- 2 tablespoons lemon zest
- Glaze
- 1/2 cup powder sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Preparation
Step 1
Combine dry ingredients and set aside
Combine sugar, zucchini, oil, egg, lemon juice and lemon zest. Add dry ingredients and stir just until combined.
Spoon into a greased bread pan
Bake 350 for 50 - 55 minutes or until golden brown and set
Cool on wire rack 15 minutes then remove from pan. Cool completely
Combine glaze ingredients and drizzle over bread
