Ingredients

  • 4 large tomatoes, peeled and sliced
  • Fresh basil leaves, chopped
  • 1/2 cup chopped green onion
  • 2 (9-inch) prepared pie crusts
  • 1 cup of grated mozzarella cheese
  • 1 cup of grated cheddar cheese
  • 1/2 cup of mayonnaise
  • 1/2 cup of milk
  • 1 egg
  • Salt and pepper

Preparation

Step 1

Preheat oven to 350 degrees F.

Place the tomatoes on paper towels in a single layer and sprinkle with salt. Allow to drain for 10 minutes. (It is important to let the tomatoes drain so your pie isn't "soupy".

Place one of the pie crusts in a greased pie plate.
Layer the tomato slices, basil, and onion on the unbaked pie crust.
Season with salt and pepper.

Combine the grated cheeses and sprinkle over the tomatoes.

Mix the mayonaise, egg and milk together and pour over the tomatoes and cheese.
Cover with the second crust, dot with butter and sprinkle the crust with paprika. place slits in the crust to vent.

Bake for 30 minutes or until lightly browned.
Cool for 15 minutes and cut into slices and serve warm.
