Whatever you Want Them to Be Whole Wheat Muffins

Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/8 nutmeg
- 2 eggs, beaten
- 2 TBSP honey
- 1 tsp vanilla extract
- 1/4 cup oil (I used coconut)
- 3/4 cup orange juice or apple juice
- heaping cup of total filling (let your imagination guide you :)
Preparation
Step 1
Heat oven to 400 degrees. Grease a 12 cup muffin tin.
In a large bowl, whisk together the flour, salt, baking powder, cinnamon and nutmeg. Make a well and add the eggs, honey, extract, oil, and juice. Stir to just combine.
Add filling, stir to combine and portion evenly into muffin cups.
Bake for 10 - 15 minutes or until a toothpick inserted in the center comes out clean. Remove from pan and cool on racks.
(filling ideas blueberries with 1/2 tsp lemon zest; 1 minced banana with chopped walnuts; diced apples and raisins; diced peaches and 1/2 tsp lime zest; chocolate chips and minced banana or walnuts; diced strawberries; raspberries; swirled with nutella in the muffin tin; etc.....
