Ingredients
- 3 (14-ounce) cans potatoes, sliced
- 1/2 pound bacon,fried and diced
- 1 onion, chopped
- Salt, to taste
- Pepper, to taste
- 1/2 cup vinegar
- 1/2 cup water
- 1/2 cup sugar
- 1/2 green bell pepper, chopped
- 5 green onions, sliced
- 2 stalks celery, finely chopped

Preparation
Step 1
Cook potatoes in jackets one day ahead. Cool and peel. Dice or slice the potatoes. If using canned potatoes (which I recommend) drain them and briefly rinse them.
Fry bacon, and add to potatoes.
To bacon grease, add large onion and salt & pepper to taste. Cook about 5 minutes and add to the potatoes.
To grease still in the pan, add the vinegar, water and sugar to make a paste. Pour over Potatoes and toss.
Add the green Pepper, green onion and celery. If desired, heat and serve. May also be served at room temperature. Add a bit of cornstarch paste to thicken if desired, adding it to the vinegar/sugar syrup, before adding it to coat the potatoes.
