mashed potato patties

Ingredients

  • 2 cups cooled mashed potatoes
  • 1 onion, minced
  • 1/4 cup flour
  • 1/2 cup grated parmesan cheese (optional)
  • 1/4 tsp. salt
  • 1/8 tsp. white pepper
  • 1 egg, beaten
  • 2 Tbsp. butter
  • 1 tbsp. olive oil.

Preparation

Step 1

mix all ingredients together. In a large nonsitck skillet, over medium heat, heat the butter and olive oil together until the butter melts. Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 3-inch circles that are about 1/2" thick. Cook until the bottom is browned and crisp, then turn over each patty with a spatula and cook the second side until it is brown and crisp.
