Cauliflower Potato Mash (low carb)

Ingredients

  • 1 large russet potato, peels and chopped
  • 4 cups fresh cauliflower florets
  • 1 clove garlic
  • 1/4 cup low fat buttermilk
  • salt and pepper to taste
  • 1 TBSP chopped fresh chives

Preparation

Step 1

In a large pot, combine potatoes, cauliflower and garlic. Add water to cover and bring to a boil. Reduce heat and simmer until vegetables are cooked, about 15 minutes. Drain and return to pot.

Add buttermilk and mash or puree until smooth. Season with salt and pepper.

Serve and sprinkle with chives.
