Ingredients
- 1 lb. Mashing potatoes, peeled and 1/2 –inch diced
- 1 medium onion, out into 1/4-inch dice
- 1 each large green and red bell pepper, cored, seeded, deribbed and cut into 1/4-inch dice kernels from 4 ears of corn
- 4 medium scallions, trimmed and thinly sliced crosswise
- 2 medium celery ribs, peeled and cut into 1/4 –inch dice
- 2 c. Milk and 1/2 c. Heavy cream
- 2 tsp. Kosher salt
- Freshly ground black pepper, to taste
- Hot red-pepper sauce, to taste
- 2 tbsp chopped flat-leaf parsley

Preparation
Step 1
In a saucepan, bring the potatoes, onion, peppers and 1 c. Of water to a boil. Cover, lower the heat and simmer for 10 min. Stir in the corn, scallions, celery, milk and cream. Return to just under a boil. Lower the heat and simmer for 10 min. Stirring to avoid scorching stir in the remaining ingredients and serve immediately.
