Balsamic-Soy Carrots with Bacon

Ingredients

  • SAUCE:
  • 4 slices bacon
  • 1 lb carrots, sliced
  • 2 t oil or left over bacon fat
  • 1 T butter
  • 1 T parsley, diced
  • 1 T soy sauce
  • 2 T balsamic vinegar
  • 1 T brown sugar

Preparation

Step 1

Preheat oven to 425 degrees.

Fry bacon until done. Remove from pan, place on plate lined with paper towels. Allow to cool then crumble.

Place carrots on roasting pan - add 2 t oil or reserved bacon fat. Toss. Cook at 425 degrees for 20 to 25 minutes, until tender.

While carrots are cooking, place sauce ingredients in medium pot. Bring to a boil and stir until bubbly. Add reserved bacon, butter, parsley, and cooked carrots.

Serve warm.
