Baked chicken and mushroom skillet

Ingredients

  • 4 boneless skinless chicken breasts
  • salt and pepper to taste
  • 3 TBSP unsalted butter, divided
  • 1 clove garlic, minced
  • 8 oz mushrooms, halved
  • 1 cup chicken broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 cup heavy cream
  • 1/4 cup parmesan cheese
  • 1 TBSP whole grain mustard

Preparation

Step 1

preheat oven to 400 degrees.

Season chicken breasts with salt and pepper. Melt 2 TBSP butter in large oven proof skillet oven medium high heat. Brown chicken on each side, 2 - 3 minutes per side. Set aside.

Melt remaining butter in skiller, add garlic and mushrooms, cook and stirring untildtender and browned, about 5 - 6 minutes. Season wiht salt and pepper, to taste. Stir in chicken broth,thyme, oregano, and basil. Return chicken to skillet.

Place into oven and roast until completly cooked through, about 20 minutes. Remove chicken and stir in cream, parmesan and mustard. Bring to boil, reduce heat and simmer slightly, add chicken, top with mushroom mixture and serve.
