Country Ham Hash

Ingredients

  • 8 oz 1/4 inch sliced country ham
  • 3 Tbsp unsalted butter
  • 1 1/2 lb russet potatoes, peeled and cut into 1/2 inch pieces
  • 1 cup chopped red onion (from 1 medium onion)
  • 1 cup chopped red or orange bell pepper
  • 1 tsp chopped garlic
  • 1/2 tsp black pepper
  • 1/4 tsp kosher salt
  • 1 Tbsp chopped fresh rosemary

Preparation

Step 1

Cook ham in a large skillet over medium heat, turning occasionally, until golden brown, about 10 minutes. Transfer ham to a plate lined with paper towels. Return skillet to medium-high, and melt butter in skillet. Add potatoes, onion, and bell pepper, spreading in an even layer. Cover and cook until potatoes soften, about 8 minutes. Uncover and stir in garlic, pepper, and salt. Cook, uncovered, without stirring, 2 minutes. Stir and continue cooking in 2 minute intervals, stirring after each interval, until potatoes are golden, about 15 minutes total. Chop cooked ham, and stir into potato mixture. Cook, stirring occasionally, until warmed and lightly browned, 2 to 3 minutes. Sprinkle with rosemary, and serve immediately.
