Ingredients
- 1 st Step: Crust
- 1 pkg.(2 in box) Zwieback (or Graham Cracker crumbs)
- 1 tbsp. sugar
- 1 tsp. cinnamon
- Roll Zieback with rolling pin until fine. Add sugar & cinnamon. Grease 9" spring mold with butter & dust with mixture. Place in refrigerator while making filling.
- 2 nd Step: Filling
- 2 lbs. Phila. Cream Cheese
- 1 cup sugar
- 6 eggs
- Good pinch of salt
- 1 tbsp. lemon juice
- Beat eggs until thick and fluffy. Add sugar then add cream cheese and lemon juice and salt. Beat mixture until very smooth. Fill mold. Bake in 375 degree oven for 35 mins.
- 3 rd Step: Topping
- 1 pt.(2 cups) sour cream
- 4 tbsp. sugar
- 1 tsp. vanilla
- Remove cake from oven and let cool 5 mins. Spread above mixture on top of cake and bake in 475 degree oven for 10 mins. Let cake cool to warm before removing ring of mold. Place in refrig. 48 hours to set up firm.
