Prime Rib Gravy

use the bones and trimming to make a killer dipping sauce/gravy

Ingredients

  • 3 or more beef ribs or other beef bones
  • Meaty trimmings from the roast with a little fat
  • 2 medium onions, root end removed, skin left on, and cut into quarters
  • 2 carrots, peeled and chopped into 1" lengths
  • 1 stalk celery, leaves left on, cleaned, and chopped into 1" lengths
  • 3 tablespoons soy sauce
  • 2 dried mushrooms
  • 1 cup dry red wine
  • 1 teaspoon your favorite rub
  • 1 bay leaf
  • 32 ounces of water or (better) c\ooked down bone marrow

Preparation

Step 1

roast the bones at325 until brown

put all ingredients in pot, add a little rosemary, thyme and garlic powder and let simmer for 3 or so hours

strain and (if grilling your meat) place in drip pan under meat to catch drippings

refrigerate for a couple hours to remove fat,

heat and serve as gravy, dipping sauce or use as a base for beef stew
