Buffalo Chicken Salad

Ingredients

  • 4 boneless chicken breasts
  • 1/8 tsp salt
  • 1/4 tsp fresh pepper
  • 2 TBSP hot sauce (Franks)
  • 1 tsp melted unsalted butter
  • 2 TBSP buttermilk or yogurt
  • 2 TBSP mayo
  • 1 oz blue cheese crumbled (about 1/4 cup)
  • 3 cups shredded romaine lettuce

Preparation

Step 1

Season chicken with salt and pepper. Grill/fry until cooked. Remove from pan. Let rest 5 minutes.

In a large bowl, whisk hot pepper sauce and butter until combined. Thinly slice chicken and add to bowl. Stir to combine.

Combine buttermilk, mayo, and blue cheese, mash with a fork. Add lettuce and toss.

Divide lettuce evenly between plates, top with sliced buffalo chicken and serve.
