Ingredients
- 5 eggs, separated
- 3/4 cup sugar
- 1 envelope unflavored gelatin
- 1/4 cup water
- 3/4 cup very strong tea. Strained
- 2 ea. oranges juiced, zest from 1
- 1 cup whipping cream
- Dash of salt
- Orange slices and whipped cream for garnish
- Chocolate curls for garnish.

6 to 8 servings
Beat egg yolks until light and fluffy. Add sugar gradually and beat until well blended and sugar is dissolved.
Soften gelatin in water for 5 min. Dissolve in hot tea.
Mix into egg-yolk mixture with orange juice and orange rind.
Whip cream and fold into egg yolk mixture.
Cover and chill in refrigerator for about 35 mm. or until mixture begins to congeal
Meanwhile, beat egg whites with a dash of salt until stiff peaks form.
Gently fold egg whites into tea- orange mixture. Blend until well combined but still fluffy
Pour into individual serving dishes or into serving bowl.
Cover and refrigerate for 3 to 4 hrs. or until congealed.
Garnish with orange slices and chocolate curls. If you wish. Top with whipped cream
