Ingredients
- 6 TBSP butter or coconut oil, room temperature
- 3/4 cup sugar
- 3 eggs, room temperature
- 2/3 cup plain greek yogurt
- 2 tsp finely grated orange zest
- 1 2/3 cups all purpose flour (half ww half white)
- 2 tsp baking powder
- 1/4 tsp salt
- pinch ground cinnamon
- 1 tin crushed pineapple, well drained (or 1 can mandarin oranges, drained and crushed)
- 1/2 cup raisins or berries (I used partridgeberries)
- 1/3 cup shredded coconut (unsweetened)
Preparation
Step 1
Preheat oven to 325 degrees and grease a 9x5 loaf pan.
Cream together the butter and sugar. Add the eggs to the butter mixture, one at a time, beating well after each addition. stir in the yogurt and orange zest.
Sift the flour, baking powder and salt. Stir this into the butter mixture. Stir in the crushed pineapple or mandarin oranges, raisins or berries and coconut. Put batter into prepared pan.
Bake 60 - 70 minutes until tester inserted comes out clean. Cool cake in pan for 30 minutes, then tap cake out of pan and continue cooling on a rack.
