Wild Rice with Cranberries

Ingredients

  • 12 oz. chicken stock
  • 1/2 red onion, diced
  • 6 oz. brown rice
  • 1 stalk celery, miced
  • 1 Tbs. butter
  • 1 c. apple cider
  • 6 oz. wild rice
  • 2 cloves garlic, minced
  • 2 oz. dry white wine
  • 2 oz. dried cranberries

Preparation

Step 1

Plump the cranberries in the wine for about 20 min., drain & reserve liquid.
Preheat oven to 350 degrees.
To make brown rice: In large ovenproof saucepan, saute' onions & celery in reserved cranberry liquid & butter until onions are translucent. Combine brown rice & stock, bring to boil & cover tightly. Cook in oven until rice is tender & all liquid is absorbed, about 40 min.
To prepare wild rice: bring apple cider, stock & wild rice to boil in medium saucepan. Cover tightly & cook in oven until rice is tender & has absorbed all the liquid, about 90 min.
Combine both rices & the plumped cranberries.
