Red Velvet Cake

Delicious cake for the holidays...a festive red cake with cream cheese frosting!!

Ingredients

  • Frosting:
  • 2 1/2 cups plain flour
  • 1 cup buttermilk
  • 1 1/2 cups sugar
  • 2 cups wesson oil
  • 1 tsp baking soda
  • 1 1/2 tsp salt
  • 1 tsp vinegar
  • 2 tsp cocoa
  • 2 T red fool coloring
  • 2 eggs
  • 1 tsp vanilla
  • 1 stick margarine less 1 T.
  • 8 oz cream cheese less 2 T.
  • 1 tsp vanilla
  • 1 box or less of confectionary sugar
  • (If humid, decrease butter, cream cheese)

Preparation

Step 1

Cream sugar and oil, add eggs and beat well. Add vinegar and food coloring, flour, cocoa, soda, salt, and mix well. Add vanilla and buttermilk. Bake at 325 degrees in two layers for 40 minutes.

Frosting:
Blend together margarine, cream cheese, vanilla, and confectionary sugar.
