Ingredients
- 2 cups whole wheat flour
- 1 cup white flour
- 1/2 cup brown sugar
- 1 TBSP baking powdser
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 cup greek yogurt
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 large eggs, room temperature
- 1/4 cup honey
- 1/2 cup olive or coconut oil (room temperature)
- 1 cup blueberries
Preparation
Step 1
Preheat oven to 400 degrees. Line muffin tin with liners. Spray liners with pam spray.
In a large bowl, whisk together flours, sugar, baking powder, baking soda, salt and cinnamon. set aside.
In another bowl, whisk together the yogurt, milk, vanilla, eggs, honey and oil.
Using a spatula, gently fold in yogurt mixture into flour mixture, until just combined. Gently fold in blueberries.
Divide mixture among mufffin tin. Bake for 18 minutes, reducing the heat to 375 degrees after 9 minute wsof baking.
Remove from oven when cooked all the way through.
