Ingredients

  • FOR MUFFIN:
  • 2 cups all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp ground cinnamon
  • pinch of salt
  • 1/2 cup brown sugar
  • 1 large apple, peeled and chopped
  • 2 eggs
  • 1 cup milk
  • 6 tsp butter, melted and cooled
  • FOR CRUMB TOPPING:
  • 1/2 cup all purpose flour
  • 1/4 tsp ground cinnamon
  • 2 1/2 tbsp butter, cut into small pieces
  • 2 tbsp brown sugar

Step 1

FOR THE CRUMB TOPPING:
In medium bowl, whisk together the flour and cinnamon.
Add the butter and cut it in with your fingertips until mixture resembles fine breadcrumbs.
Stir in the sugar and set aside.
FOR THE MUFFIN:
PREHEAT oven to 400 degrees F.
Line muffin tin with 12 paper liners, set aside.
In large bowl, whisk the flour, baking powder, cinnamon, salt until combined.
Stir in the sugar.
Add the chopped apple to the flour mixture, and stir together.
In medium bowl, lightly beat the eggs.
Add milk and butter.
Make a well in center of dry ingredients and pour in egg mixture.
Stir gently until just combined, being careful not to overmix.
Spoon batter into muffin tin, top with crumb topping.
Bake 20 minutes, until muffins have risen and are golden brown.
Let cool in pan for 5 minutes, serve warm or transfer to wire rack to cool completely.
