Portabello Mushroom Wellington

Ingredients

  • Mushrooms:
  • oil
  • 4 portabellos
  • salt & P
  • thyme
  • rosemary
  • minced garlic, 4 cloves
  • Loaf Mix:
  • oil/onion/rosemary/thyme/S&P/1 c white wine/1/2 T brown sugar
  • 2 c chestnuts/2 c pecans/2 slices bread
  • Gravy:
  • onion
  • 2 carrtots
  • 2 celery
  • 1 leek
  • 4 cloves garlic
  • rosemary, thyme, bay, salt
  • oil
  • 1 c porcinis, 2 c hot water
  • Assembly: puff pastry

Preparation

Step 1

Mushrooms:
Roast @ 400 for 15 min.

Loaf Mix:
cook onion mixture
whiz up the rest
combine

Assembly:
line pan with parchment and 1 puff pastry
add 1/2 loaf mixture
add mushrooms
add other 1/2 loaf mixture
top with 2nd puff pastry
trim & crimp
brush with almond milk
bake @ 400 for 40 min.

Gravy:
roast veggies & spices @400 for 45 min; mash
cook veggie mash w/flour, 2 c stock, porcini water, 1/2 c port, 1T soy sauce
