This will produce a rare roast, just the way I like it! Since using the oven for the potatoes is out, this can be served with Garlic Roasted Potatoes on Rosemary Skewers that is cooked on the grill.

Ingredients

  • For a 3.5 lb roast use the following rub:
  • 1 prime rib roast
  • 3 . 1 tsp. Rosemary, crushed
  • 4. 1/2 tsp. dried Thyme
  • 5 . 2 cloves Garlic
  • 6 . 1/2 tsp salt
  • 7. 1/4 tsp. pepper

Preparation

Step 1

Bring roast to room temp, letting it sit out about 4 hours.
Preheat oven to 500.
Season the roast as desired.
Place in preheated oven for 5 minutes per pound.
Turn off the oven.
DO NOT OPEN THE DOOR!
Let stand in the oven for 2 hours.
The roast is ready to carve at the end of 2 hours.

12/2015 If you have a double oven I suggest that you do not use the other oven during the "sit time". I baked scalloped potatoes at 400F for 1 hour in the oven above the roast and it was more done than usual. Still pink but not nearly as good as it usually is.
