Roasted Garlic Fingerling Potatoes

Serve these perfectly crispy potatoes with a nice steak and bacon wrapped asparagus for a super easy, gourmet meal!

Ingredients

  • 1 1/2 lb fingerling potatoes
  • 4 T olive oil
  • 8 garlic cloves, sliced
  • 1 T Italian parsley leaves, freshly chopped
  • Salt and black pepper

Step 1

Preheat oven to 350
In a large casserole dish, mix together the potatoes, oil, garlic, parsley, salt and pepper.
Roast for 20 minutes or until the potatoes are tender
