Venison Stew

Ingredients

  • 1-2 pounds deer meat, cut into small cubes
  • 3 celery stalks, sliced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 1 large potato, peeled and cubed
  • 1 can beef broth
  • 1 can petite diced tomatoes
  • 1 soup can water
  • 1 tomato can water
  • 1 can mushrooms (optional)
  • 3 bay leaves
  • 1/4 tsp. thyme
  • 1 teaspoon oregano
  • salt and pepper to taste
  • (optional: during last 20 minutes, add 1 cup barley)

Preparation

Step 1

Brown meat in a little oil. Add onions and carrots, stirring about 1 minute. Add remaining ingredients (except barley) and bring to boil. Cover and simmer about 2 hours, until meat and veggies are tender.
