PCL Chicken Salad

Best chicken salad ever! It came from Mrs. Pitts who owned and managed the Pine Creek Lodge in Nacogdoches.

Ingredients

  • boneless chicken breast
  • can chicken broth
  • 1 onion, quartered
  • 1 stalk celery
  • ********************************
  • diced onion
  • diced celery
  • diced apple
  • sliced grapes
  • sweet relish
  • chopped pecans
  • mayonnaise and Miracle Whip
  • salt and pepper

Preparation

Step 1

Cook chicken breast and onion and celery in broth until tender. Remove chicken and cool; chop.

Add enough onions, celery, apple, relish, grapes and pecans to your taste. Moisten with mixture of mayonnaise and Miracle Whip. Season to taste. Chill.
