Mexican Eggs (Huevos Rancheros)

Ingredients

  • 4 Tbs oil
  • 6 6-inch corn tortilla
  • 1 14 oz. can refried beans
  • 6 eggs
  • jack cheese
  • taco sauce
  • Servings: 4

Preparation

Step 1

1. Coat bottom of a large frying pan with oil. Set over medium heat. When oil is hot add three tortillas and cook till bubbly and hot. Turn tortillas and spoon a 1 inch border of refried beans around the edges of each tortilla. Break an egg into the center of each tortilla. Cover with a lid or foil and cook until eggs are done, about 6 mins for a soft center. With a wide spatula, lift each tortilla onto plate. Sprinkle with cheese and add taco sauce. Serves 3-6. Cooks note: Use two frying pans so they will all be ready at the same time. Heat beans before spreading on tortillas.
