Ingredients
- 2 lbs sweet potatoes, chopped into large chunks
- 3 T ghee
- 2 T maple syrup
- 1/4 t ground cinnamon
- 1/2 cup pecans, chopped and divided
Preparation
Step 1
1. Bring a large stock pot of water to a boil. Boil the sweet potatoes over medium
heat until fork tender, about 20 minutes.
2. Preheat the oven to 425°F. Drain the sweet potatoes and add to a large mixing
bowl. Mash using a potato masher or fork.
3. Stir in the ghee, maple syrup, cinnamon and half of the pecans.
4. Pour into a large casserole dish and top with the remaining pecans. Bake for 10
minutes, and serve hot!
