Banana oat Muffins with Molasses
so yummy! Family favorite!! Makes 12 regular muffins or 18 mini muffins :)

Ingredients
- 1/2 cup butter, softened
- 1/3 cup sugar
- 2 large eggs
- 3 ripe bananas (1 1/4 cups after mashing)
- 1/4 cup molasses
- 1/2 cup plain yogurt or buttermilk
- 1 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 1/2 cups flour (use half whole wheat)
- 3/4 cup rolled oats
Preparation
Step 1
preheat oven to 350 degrees. Grease muffin tin.
In a large bowl beat butter and sugar. Beat in eggs, one at a time.
Add the bananas, molasses, yogurt and vanilla. Mix well.
Sprinkle over the baking soda, salt, cinnamon and nutmeg. Mix well.
Add the flour 1/2 cup at a time, mixing gently. Gently stir in oats.
Spoon into prepared tins and bake for 20 - 25 minutes or until cooked in the middle.
Let cool 10 minutes before removing from pan.
variation....add 1/2 cup dried cranberries and 1 tsp orange zest.
add 1/2 cup fresh blueberries and 1 tsp lemon zest.
