Crepes

Ingredients

  • Set the electric cooktop to a 6 and be sure to heat the pan well before pouring in the first batter. You'll probably end up throwing away (or eating!) the first crepe. For some reason the first one doesn't look quite right.

Preparation

Step 1

1. Combine flour, sugar and salt in a mixing bowl or 4 cup glass measure. Add eggs and half of the milk. Beat with a rotary beater until smooth. Add the remainder of the milk and the butter. Cover the bowl and let rest in the refrigerator for at least 1 hour. This time allows the particles to expand in the liquid and give a smooth, tender crepe. Before you cook the first crepe, cure the pan by pouring in about 1 Tbs. oil and place on medium heat for 2-3 min's. Wipe out with a paper towel. This "cure" should be sufficient for a whole batch of crepes. When the pan is heated, lift it from the heat. Pour in sufficient batter so that the entire bottom of the pan is covered. You should hear a gentle sizzle if the pan is the right temperature. Pour the excess back into the container, drawing the edge of the crepe pan across the container. Return the pan to the heat for 15-30 seconds, or until the surface of the crepe is completely dry and slightly brown around the edges. Remove from the heat. Tip the pan over and the crepe will fall out on a plate. A gentle tap of the pan or the running of a fork around the edges may be necessary to dislodge the crepe. Return the pan to the heat and repeat. You can stack the crepes on top of each other. They will keep in the refrigerator for 2-3 days and in the freezer for up to 4 months.
