Italian Chicken Meal Prep Bowls

Ingredients

  • 2 lbs chicken breasts, boneless skinless
  • 1 1/2 cup broccoli florets
  • 1 small red onion, chopped
  • 1 cup plum tomatoes
  • 1 medium zucchini, chopped
  • 2 tsp minced garllic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp basil
  • 2 tsp marjoram or 1 tsp oregano
  • 2 tsp rosemary
  • 2 tsp thyme
  • 1 tsp paprika
  • 2 TBSP olive oil
  • 2 -4 cups cooked rice (optional)

Preparation

Step 1

Preheat oven to 450 degrees. Line a baking sheet with aluminum foil and set aside.

In a small bowl mix seasonings, from salt to paprika. Place chicken and veggies in the baking sheet. Sprinkle all the spices and garlic evenly over the chicken and veggies. Drizzle with olive oil...mix lightly with hands.

Bake for 15 - 20 minutes and veggies are slghtly charred.

Broil 1 - 2 minutes to brown chicken.

Divide rice, chicken and vegetables into 4 servings. Cover and store in refrigerator for 3 - 4 days.
