Ingredients

  • 2 large potatoes, peeled, coarsely grated
  • 2 large carrots, peeled & coarsly grated
  • 2 large parsnips, peeled & coarsely grated
  • 1/4 c. flour
  • 1/4 c. dill, chopped
  • 1/4 c. green onions, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 egss, beaten
  • canola oil

Preparation

Step 1

Preheat oven to 300.

1. In a bowl combine flour, dill, green onions, salt & pepper.
2. Add shredded vegetables & mix well.
3. Add eggs to vegetable mixture.
4. Pour mixture into a large colander with a bowl underneath.
5. Heat oil in large skillet.
6. Drop vegetable by large spoonful into hot oil.
7. Brown on both sides.
8. As the latkes are cooked place them on baking pan & place in oven to keep warm.
9. Can be made ahead & served at room temperature.
